Mix all ingredients in a mason jar in following order: chia seeds, milk, sweetener, vanilla extract.
Stir vigorously for 1 minute, making sure to break apart the chia seeds.
Wait 2 minutes and repeat.
Refrigerate for 2 hours or overnight before eating.
Serve it cold with fruit and nut toppings of your choice. I used dried banana, coconut shavings, blueberries, and chopped almonds and cashews.
You can use any milk (dairy or non-dairy) of your choice.
